Salsa Verde

Vibrant and fresh, this homemade salsa verde is quick and easy to make and takes less than 5 minutes to blitz in a mini chopper. This herby green sauce tastes delicious with everything from grilled fish and vegetables to a roast chicken or lamb.


  • Small handful flat-leaf parsley (approx 10g)
  • Small handful fresh basil (approx 5g)
  • Small handful fresh fresh mint (approx 5g)
  • 1 small garlic clove, peeled
  • 10g capers
  • 10g small gherkins, rinsed
  • 1 anchovy fillet
  • ½ tbsp lemon juice
  • 30ml extra virgin olive oil


  1. Place all the herbs into a Spice Grinder or Mini Chopper, followed by the remaining ingredients.
  2. Process until you have a thick sauce.
  3. Serve with fish, roasted vegetables or pasta.
