Roasted Vegetables

Roasted Vegetables are simple and take very little time to prepare. Packed full of delicious flavours, they can be served as a side dish or as a healthy snack.

Ingredients:

  • 300g carrots
  • 150g parsnip
  • 1 tbsp. olive oil
  • Sea salt

Directions:

  1. Cut the carrots and parsnips into rough batons, approximately 10cm in length. Toss the vegetables with the oil and sprinkle with sea salt.
  2. Place the vegetables, in an even layer, on the baking tray and put into rack position 2. Set to roasts & pizzas, at 160˚C, for 25 minutes. Check the vegetables occasionally, turning if necessary. Cook until they are starting to crisp and colour.
  3. Serve with a dipping sauce.
