Red Berry Tiramisu

Tiramisu is a traditional Italian dessert, which is perfect for serving up as an after dinner treat. It’s simple to make so can be made ahead, to save time too. This Red Berry Tiramisu is even more luxurious, with some added berries, to give it an extra indulgent kick.

Ingredients:

  • 12 sponge biscuits
  • 3 eggs
  • 60g caster sugar
  • 250g mascarpone cheese
  • 250g raspberries
  • 125g blackberries
  • 100ml amaretto
  • 20g crushed pistachios

Directions:

  1. Separate the egg yolks from the egg whites.
  2. Mix together the egg yolks and 40g of the caster sugar, using the Hand Mixer. The mixture should whiten and increase in volume.
  3. Add the mascarpone and continue to mix gently, at speed 1.
  4. Beat the egg whites, with the remaining caster sugar, at speed 5, until stiff peaks are formed.
  5. Fold the egg whites into the mascarpone cream mixture.
  6. Crush 125g of the raspberries with the amaretto.
  7. Dip the biscuits into the coulis and place them in the glasses.
  8. Add a layer of mascarpone cream.
  9. Sprinkle with raspberries and blackberries.
  10. Repeat this process for a second layer.
  11. Decorate with the crushed pistachios and the remaining raspberries.
  12. Set aside, in a cool place, for 2 hours before serving.
