Pea and Mint Soup

This pea and mint soup is the perfect comfort food! It's fresh, simple, and packed with flavour. A bowl of this soup will warm you up and leave you feeling cosy inside.

Ingredients

  • 1 onion 
  • 500g frozen peas 
  • 1 garlic bulb 
  • 90g fresh mint (about a handful) 
  • Salt & pepper, to taste 
  • 500ml vegetable stock (or more for a thinner soup) 

Preparation

  1. Prepare the Ingredients: Start by chopping the onion and garlic. Use your Easy Prep Pro to chop them quickly and evenly. For extra flavour, you can make a garlic-onion paste in the small bowl of the Easy Prep Pro. Just chop them small and blend until smooth. 
  2. Cook the Base: Heat some oil in a large pot over medium heat. Add the garlic-onion paste and sauté for a few minutes until it becomes fragrant. 
  3. Add Peas & Stock: Add the frozen peas to the pot and stir for a minute. Then, pour in the vegetable stock. Bring to a boil, then lower the heat and simmer for 10-15 minutes until the peas are tender. 
  4. Blend & Season: Blend the soup until smooth using a hand blender or in the larger bowl of the Easy Prep Pro. Add fresh mint leaves and blend them in. Taste and season with salt and pepper. 
  5. Serve: Pour the soup into bowls, garnish with mint, and enjoy!
