Oat Milk Ice Cream

Oat Milk Ice Cream is a delicious alternative to traditional, dairy based ice cream. Quick and easy to make, this recipe is sure to go down a treat!

Ingredients:

  • 1L vanilla oat milk
  • 4 egg yolks
  • 150g brown sugar
  • 100g rolled oats
  • 50g caster sugar

Directions:

  1. In a saucepan, bring the oat milk to a boil.
  2. Beat together the egg yolks and brown sugar, before adding to the boiling oat milk.
  3. Cook at a low heat, whilst stirring, to turn into a custard. Then set aside in a cool place.
  4. Place the gelato paddle into the bowl of the Ice Cream & Gelato Professional.
  5. Pour the oat milk into the bowl and churn the ice cream for 50 minutes.
  6. Whilst the ice cream is churning, add the brown sugar into a saucepan and heat through to make a caramel.
  7. Add the rolled oats and mix thoroughly.
  8. Pour the caramel onto some baking paper and spread out, to an even layer, before leaving to cool.
  9. Once cooled, break the caramel into small pieces.
  10. When the ice cream has finished churning, serve in bowls, with caramel pieces sprinkled over the top.
