Homemade Curry Powder

Ingredients
- 2 tbsp cumin seeds
- 2 tbsp coriander seeds
- 1 tbsp turmeric powder
- 1 tbsp mustard seeds
- 1 tsp fennel seeds
- 1 tsp black peppercorns
- 1 tsp chili powder (adjust for heat)
- 2 dried curry leaves (optional)
Preparation
- Toast the Spices: Heat a dry pan over medium heat. Toast cumin, coriander, mustard, fennel, and peppercorns for 2 minutes until aromatic.
- Grind the Blend: Let the spices cool, then grind to a fine powder using the Cuisinart Spice Grinder.
- Mix & Store: Combine with turmeric and chili powder. Store in an airtight jar for up to 3 months.
