Grilled Veg & Halloumi Toastie

Toasted sandwiches are quick, easy and very filling! Try this recipe for a Grilled Veg & Halloumi Toastie, it’s packed full of flavour can be ready in less than 20 minutes – ideal for a tasty lunch.


  • ½ red pepper, cut into chunks
  • ½ yellow pepper, cut into chunks
  • ½ green pepper, cut into chunks
  • Small courgette, cut in ½ cm thick slices
  • 1 red onion, cut into ½ cm thick slices
  • 8 slices halloumi
  • Olive oil
  • Salt & freshly ground pepper
  • 4 slices wholemeal bread
  • Butter
  • 2 tbsp. pesto


  1. Attach the grill plates to the Grill & Sandwich maker and preheat on high.
  2. Spread out the prepared vegetable and halloumi. Drizzle on a little olive oil and season with salt and freshly ground pepper.
  3. When the green indicator light shows, place some of the vegetables onto the grill plate. Lower the lid and cook for approximately 6 to 8 minutes, or until the vegetables are softened and slightly charred. Repeat until all the vegetables are grilled.
  4. Once all the vegetables are grilled, repeat with the halloumi.
  5. Carefully remove the grill plates and attached the sandwich plates. Preheat the temperature to high.
  6. Butter the 4 slices of bread, on what will be the outside of the toasted sandwich.
  7. Place 2 slices of bread, buttered side down, on to a work surface and layer evenly with the grilled vegetables and halloumi. Take the 2 remaining slices of bread, buttered side up and spread a layer of pesto all over. Place these on top of the sandwich, buttered side facing up.
  8. Once the green indicator light shows, place each sandwich onto the heated plates and close the lid. Toast for 5 minutes or until golden brown and serve.
