Grilled Cheese & Tomato Sandwich

This classic grilled sandwich, using tomatoes, cheese and peppers, is quick and easy to make and is ideal for a light lunch. It’s also a great vegetarian option too.

Ingredients:

  • 1 large red pepper
  • Olive oil
  • 1 ciabatta, sliced in half lengthways
  • 2 tomatoes, sliced
  • 1 mozzarella ball, sliced
  • Basil leaves

Directions:

  1. Attach the GRILL plates to the 2 in 1 Grill and Sandwich Maker. Preheat to MEDIUM -HIGH.
  2. Remove the stem and seeds from the pepper and cut into quarters. Brush with olive oil.
  3. When the 2 in 1 Grill and Sandwich Maker is up to temperature, place the pepper onto the grill plates. Close the lid and grill for approximately 4 –5 minutes, until the skin starts to blacken and blister. Remove from the heat and allow to cool for a minute. If you like the skin removed, then gently peel off.
  4. Take the bottom half of the ciabatta and layer on the tomatoes, mozzarella, grilled pepper and basil. Place the top half of the ciabatta on.
  5. Place the sandwich onto grill and gently close the lid. Cook for 5 minutes on MEDIUM –HIGH or until the bread starts to crisp and the mozzarella oozes out.
  6. Remove from the grill and serve
