Grilled Porcini Mushrooms

Grilled porcini mushrooms are so versatile and make the perfect starter or light bite.

Ingredients:

  • 300g fresh porcini mushrooms
  • 2 smoked bacon slices
  • 1 onion
  • 1 rosemary sprig
  • Salt

For the Marinade:

  • 10 tellichery peppercorns
  • 10 red Szechuan peppercorns
  • 4 juniper berries
  • 2 pinches dried red bell pepper
  • 1 sprig fresh thyme
  • 1 clove garlic,peeled
  • 100ml olive oil

Directions:

  1. Wash the mushrooms and cut in half. Set aside on kitchen paper.
  2. Slice the onion into rings and separate the rings.
  3. Add the ingredients for the marinade into the Spice Grinder and blend until smooth.
  4. Attach the GRILL plates to the Griddle and Grill and preheat to 220 ̊C.
  5. Baste the mushrooms, with the marinade and place them on the grill. Season and cook for 4 minutes, with the lid closed.
  6. Set the mushrooms aside and add the onions rings to the grill. Cook for 1 minute, with the lid closed and then set aside.
  7. Place the bacon slices on the grill and cook for 2 minutes, with the lid closed.
  8. Dish the porcini mushrooms out onto two plates. Then add the onion rings and grilled bacon.
  9. Garnish with rosemary and any remaining marinade, before serving
