This simple, vegetarian, Spanish style soup is a quick and healthy option for an on the go lunch. It also counts towards your 5 a day!


  • 150g tomatoes, diced
  • 80g red pepper, diced
  • 100g cucumber, peeled and roughly chopped
  • ½ red onion, peeled and roughly chopped
  • 1 clove garlic, peeled
  • 1 small fresh chilli
  • 1 tsp. tomato purée
  • 1 egg yolk
  • 50ml olive oil
  • 1 tsp. red wine vinegar
  • Sea salt and freshly ground black pepper

To Serve:

  • 200g toasted croutons
  • 1 hard-boiled egg, chopped
  • 1 tbsp. chopped parsley
  • Olive oil


  1. Add all the fresh vegetables into the blending cup of the Cordless On the Go Blender and blend into a pulp, for approximately 10 seconds.
  2. Add the egg yolk, tomato purée, olive oil, vinegar and season to taste. Blend again, for approximately 10 seconds, to combine the ingredients together.
  3. Check for seasoning and chill for an hour before serving to allow all the flavours to develop.
  4. To serve, pour into bowl and top with the toasted croutons, a little of the chopped egg and finish with a drizzle of olive oil and chopped parsley.

Tip: For a quick, on the go, version of this soup, you can place all your ingredients into the blending cup and refrigerate until ready to blend, cutting out the extra chilling time
