Gazelle Horns

These delicious gazelle horns originate from Morocco, consisting of a sweet almond and orange blossom filling, wrapped in a thin pastry. They are easy to make in our food processors and make the perfect sweet treat

Ingredients:

For the filling

  • 125g almond powder
  • 60g brown sugar
  • 20g butter
  • 1 tsp cinnamon
  • 50ml orange blossom

For the dough

  • 125g flour plus some extra for rolling
  • 1 tsp salt
  • 65g butter
  • 25ml water
  • 5ml orange blossom

Icing sugar for dusting

Directions:

  1. Preheat your oven to 180°C
  2. For the filling, mix the almond powder, brown sugar and butter and crush the mixture together with the ends of your fingers. Then add in the cinnamon and orange blossom and continue to mix together with your fingers. Put the mixture in the fridge to set.
  3. For the dough, mix the flour, salt and butter in a food processor and process on ‘low’ for a few seconds. Then add in water and orange blossom and process on ‘low’ for around 1 minute until a ball of dough forms.
  4. Remove the dough onto a floured surface and split into 2. Roll out each piece of the dough until it is very thin and cut into quarters. Add a spoonful of filling to each piece and roll up like a croissant.
  5. Bake in the oven for 15 minutes on a baking tray lined with baking parchment.
  6. Remove from the oven and sprinkle with icing and sugar to serve.
