Fresh Strawberry Ice Cream

This quick and easy ‘no cook’ recipe for homemade strawberry ice cream uses just a few ingredients, that you probably have in your fridge already. Give it a go in any of our ice cream makers.

Ingredients:

  • 300g fresh strawberries, stemmed & roughly chopped
  • 1 tbsp lemon juice
  • 160ml full fat milk
  • 150g granulated sugar
  • 300ml double cream
  • 1 tsp vanilla extract

Directions:

  1. Combine the strawberries, lemon juice and 50g of the sugar into a small bowl. Using a potato masher, mash the combined ingredients together until the strawberries begin to mush and break down. Set aside.
  2. Pour the milk and the remaining sugar into a medium bowl and whisk until the sugar has dissolved. Stir in the cream, vanilla and mashed strawberries. Stir to combine well.
  3. Pour the mixture into the mixing bowl of your ice cream maker with the paddle already inserted. Cover with the lid and churn. The ice cream is ready when it begins to thicken and freeze.
  4. For a firmer ice cream, freeze for several hours in an airtight container.
