Crunchy Vegetable Salad

This Crunchy Vegetable Salad is the perfect recipe to welcome in Summer. Super fresh and full of flavour, have it on its own or add it to the side of any meal.

Ingredients:

  • 1 organic carrot
  • 200g organic celery
  • 1 organic Granny Smith apple
  • ½ organic Chioggia beetroot
  • 3 tbsp. pomegranate seeds
  • 2 tbsp, chopped parsley
  • 2 tbsp. chopped walnut kernels
  • 2 tbsp. roasted hazelnuts

For the Sauce:

  • 4 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1 tbsp. liquid honey
  • Salt and pepper

Directions:

  1. Using the small bowl of the Easy Prep Pro, pour in the olive oil and add the mustard, lemon juice and honey. Season to taste and blend for about 20 seconds. Set aside.
  2. Using the large bowl of the Easy Prep Pro, attached the grating disc and grate the carrots, celery, beetroot and apple.
  3. Pour the grated vegetables into a salad bowl and drizzle with the vinaigrette.
  4. Sprinkle with walnuts, hazelnuts, parsley and pomegranate seeds, before serving.
