Crispy Mirabelle Plum Tarts

Fruit tarts are delicious, simple to make and plums make a good alternative to apple or pear. They are also a good way of using up leftover fruit, you may have at home.

Ingredients:

  • 2 eggs
  • 150g almond powder
  • 150g caster sugar
  • 150g softened butter
  • 1 packet of brick pastry
  • 50g melted butter
  • 50g light brown sugar
  • 800g Mirabelle plums, stoned and cut in half
  • Zest of 1 lemon
  • 20ml Mirabelle plum brandy

To Serve:

  • Toasted almonds
  • Ice cream

Directions:

  1. Mix together the lemon zest with the brandy and then add the plums. Stir so the plums are coated with the brandy mixture and let it let steep for 20 minutes.
  2. Using the Cordless Power Hand Mixer, on speed 5, mix together the eggs and sugar.
  3. Then add the butter and mix again on speed 3.
  4. Pour in the almond powder and mix again on speed 1. Set aside in a cool place.
  5. Using a 22cm pie dish, place this on a baking tray and place a sheet of brick pastry inside. Then butter and sprinkle with sugar.
  6. Repeat this process 5 times.
  7. Spread the almond cream on top of the pastry sheet and then pour the Mirabelle mix on top.
  8. Bake at 180˚C for 50 minutes.
  9. Serve with vanilla ice cream and toasted almonds.
