Cranberry & Cocoa Energy Balls

Cranberry and Cocoa Energy Balls are the perfect snack, as they are nutritious and low in sugar. Great to have on the go and will give you a slow release of energy, throughout the day

Ingredients:

  • 1 tbsp. flax seeds
  • 1 tbsp. chia seeds
  • 150g dates, pitted
  • 60g unsalted cashews
  • 40g quinoa flakes
  • 1 tbsp. coconut oil
  • 50g cranberries
  • 80g cocoa nibs

Directions:

  1. Put the flax and chia seeds into the bowl of the Easy Prep Pro.
  2. Using the chopping blade, mix on LOW, for 30 seconds to crush the seeds.
  3. Then add the dates, cashews, quinoa flakes, coconut oil and cranberries to the bowl and blend on LOW, until the mixture is like a paste.
  4. Shape the mixture into 15 balls and roll in the cocoa nibs.
  5. Place the balls in an airtight container and place in the fridge, for at least 2 hours, before serving.

Tip: Energy balls are great as snacks for children or sports people, as they provide energy at times, when it is needed, during the day.
