Courgette and Wild Garlic Soup

Courgette and Wild Garlic Soup is the perfect recipe to make, when the wild garlic is in season and can be enjoyed as a starter or as a light lunch.

Ingredients:

  • 2 tbsp. olive oil
  • 2 medium leeks, finely sliced
  • 3 medium courgettes, sliced
  • 1 potato, roughly cubed
  • 1 clove garlic, crushed
  • 1 bunch wild garlic leaves, roughly chopped
  • 1 tbsp. fresh mint, chopped
  • Sea salt and freshly ground black pepper
  • To Serve:
  • Olive oil
  • Fresh bread

Directions:

  1. Put 2 tablespoons of olive oil into a large pan. Add the leeks and sauté, until beginning to soften.
  2. Add the courgette and the crushed garlic, stir well and continue to sauté for a few minutes.
  3. Add the potatoes and season with salt and pepper.
  4. Add enough water to cover the vegetables, bring to the boil and simmer for about 15 minutes, until the vegetables are tender.
  5. Remove the pan from the heat and add the wild garlic and mint. Allow to sit for several minutes, with the lid on, while the heat from the soup wilts the wild garlic.
  6. Using the Cordless Pro Hand Blender, with the BLENDING SHAFT attachment, blend the soup, adding a little more water, if the soup is too thick. Check the seasoning.
  7. Serve with a drizzle of olive oil and fresh bread.
