Ingredients:

  • 200g caster sugar
  • 110g butter, melted
  • 40g cocoa powder
  • 2 eggs
  • 110g plain flour
  • ¼ tsp baking powder
  • 60g dark chocolate chips or chunks

Directions:

  1. Line a 20cm square cake tin with greaseproof paper.
  2. Using the Cordless Power Hand Mixer, beat together the sugar with the melted butter, until smooth. Add the cocoa powder and continue to beat, until well combined. Beat in the eggs, one at a time, until the mixture is smooth and glossy.
  3. Sift in the flour and baking powder and fold into the mixture. Stir in the chocolate chips and mix well with a spatula. Place into the prepared cake tin and smooth down the top.
  4. Place the baking tray into the oven, on rack position 1. Set to bake at 160˚C, for 25 minutes. Allow the oven to preheat for 5 minutes.
  5. With 20 minutes remaining on the timer, place the cake tin onto the baking tray, in the oven. Bake the brownies until they are just starting to set in the middle and firm on the outside.
  6. Leave to cool in the tin, before cutting into 9 equal pieces.
