Chicken Liver Pâté

Try a touch of French cooking with this delicious chicken liver pâté recipe, perfect as an impressive homemade starter or why not treat yourself as a lunchtime snack.

Ingredients:

  • 200g Chicken Livers, cleaned and roughly chopped into 1.5cm pieces
  • 100g Soft Butter
  • ½ Brown Onion, finely chopped
  • 1 Clove of Garlic, crushed
  • 1 tsp Fresh Thyme, or a pinch of dried thyme
  • ¼ tsp Ground allspice
  • Sea Salt and freshly ground pepper
  • 1 tbsp Brandy

Directions:

  1. Set the timer of the Soup Maker Plus to 12 minutes on SAUTÉ. Add a quarter of the butter along with the onion and garlic.
  2. Allow the onions and garlic to soften in the butter for 5 minutes. Use the ‘SLOW STIR’ button to stir occasionally.
  3. After the 5 minutes set the Soup Maker to HIGH and add the chicken livers, thyme, allspice and seasoning. Cook for a further 5 minutes, stirring occasionally.
  4. Pour in the brandy and stir.
  5. Set the Soup Maker to SIMMER and add the remaining butter. Stir, and allow to gently cook for the remaining time.
  6. Blend on setting 2 until smooth. Test for seasoning and adjust as desired.
  7. Spoon the pâté into a suitable bowl and cover with plastic wrap. It will appear runny at first. Refrigerate for at least 3 hours to set.
  8. Serve with your favourite fresh bread or hot toast and a squeeze of lemon
