Cherry Tomato & Feta Clafoutis

Love clafoutis but fancy something a bit more savoury? This amazing Cherry Tomato and Feta Clafoutis recipe has you covered.

Ingredients:

  • 4 eggs
  • 250ml full fat milk
  • 70g cornflour
  • Salt and pepper
  • 4 tbsp. tapenade
  • 200g cherry tomatoes, on the vine
  • 200g feta cheese cubes

 

To Serve:

  • Green Salad
  • Balsamic Vinegar Dressing

Directions:

  1. Put the eggs, milk and cornflour into the blending cup of the Cordless On the Go Blender.
  2. Add in a little salt and pepper.
  3. Attached the blade assembly and attach to the base.
  4. Blend the ingredients together, for approximately 20 seconds.
  5. Spread a spoonful of tapenade into each baking dish.
  6. Add the feta and cherry tomatoes and then pour the liquid mix into each baking dish.
  7. Place the baking dishes onto a baking tray.
  8. Add a little water to the bottom of the baking tray and then bake in the oven, for 20 minutes, at 170˚C.
  9. Serve with a green salad, with a balsamic vinegar dressing.
