Cauliflower is a fantastic low carb vegetable that's packed with vitamins, minerals & fibre. Enjoy these healthy, flavourful steaks as a fast meat alternative or try serving with your roast dinners.
Ingredients
Spice mix
- 1 small nutmeg
- 4 tsp black peppercorns
- 5 cloves
- ½ cinnamon stick
- 4 tsp cumin seeds
- 3 tsp coriander seeds
- 1 tsp cardamon pods, seeds only
- 6 tsp mild paprika
- 5 tbsp olive oil
- 1 medium cauliflower
Preparation
- Place all the spices into a Spice Grinder or Pestle and Mortar and process until finely ground. Remove 4 tbsp of the spice mix and set aside.
- Take the 4 tbsp of the spice mix and combine with the olive oil to make a runny paste.
- To prepare the cauliflower steaks, remove the leaves from the cauliflower (the young tender leaves can be sliced and cooked along with the cauliflower). Trim the base so that it sits flat on a board. Cut 2 thick slices, or 3 moderate slices out of the centre of the cauliflower.
- Insert the grill plates into the Griddle & Grill and close the lid.
- Heat the plates to 200ºC.
- Generously coat the cauliflower steaks and leaves with the spice mixture.
- Place the cauliflower steaks and leaves onto the hot grill plates, close the lid. Grill for 5 minutes
