Buddha Bowl

Buddha bowls are simple to make and are full of healthy vegetables and grains, to help you achieve a balanced diet.

Ingredients:

  • 1 avocado,diced
  • ½ red bell pepper
  • 1 carrot
  • ½ small fennel
  • 1 yellow pineapple tomato
  • 4 large radishes
  • 1 small yellow beet
  • 1 handful of lettuce leaves
  • 4 tbsp. cooked buckwheat seeds
  • 1 tbsp. sunflower seeds
  • 2 tbsp. sprouted vegetable seeds
  • Salt and ground pepper

For theSauce:

  • 5 fresh coriander leaves
  • 50ml olive oil
  • 50ml sesame oil
  • Zest of 1 lemon
  • 20ml soy sauce

Directions:

  1. Clean and peel the vegetables.
  2. Pour the ingredients, for the sauce, into the smaller bowl of the Easy Prep Pro.
  3. Blend for 15 seconds, until the sauce is smooth and set aside.
  4. Using the thinnest slicing discs, slice the vegetables one at a time.  Set each vegetable aside, until all vegetables have been sliced.
  5. Evenly divide each sliced vegetable, apart from the lettuce, into 2 bowls and then add the diced avocado and the buckwheat seeds on the top.
  6. Add a handful of lettuce and the sprouted vegetable seeds to each bowl.
  7. Sprinkle the sunflower seeds over the top.
  8. Drizzle each bowl with the sauce, before serving.
