Almond Fudge Ice Cream

Indulge with this Almond Fudge Ice Cream! Simple to make, it’s the perfect dessert for a summer’s day. It’s also made using almond milk, so it’s an ideal, dairy free, alternative to traditional ice cream. Recipe created by @brymorganna.

Ingredients:

  • 500ml almond milk
  • 170g almond butter
  • 70g golden caster sugar
  • 1 tsp. vanilla extract
  • 80g fudge pieces, roughly chopped
  • 40g sugared almonds, roughly chopped

To Serve:

  • 40g sugared almonds, roughly chopped

Directions:

  1. Using the Cordless Pro Hand Blender, with the blending attachment, process the almond milk, almond butter, caster sugar and vanilla extract, in the blending jug, until smooth.
  2. Chill for at least 2 hours or overnight.
  3. Once chilled, whisk the mixture and pour into the Ice Cream & Gelato Professional, with the ice cream paddle attached. Place the lid on and set the timer for 40 minutes, to start the churn.
  4. With 10 minutes remaining on the timer, add the fudge pieces and sugared almonds.
  5. At the end of churning, the ice cream will be a soft scoop. If you want a firmer texture, place in an airtight container and freeze for several hours.
  6. Serve the ice cream, topped with a scattering of sugared almonds.
